Roll out a golf ball size of dough into a thin oval shape
Drop one spoonful of sauce onto the dough and using the back of the spoon spread it around leaving an inch of dough around the outside of the edge not covered. Use more sauce if needed.
Add cheese and toppings to one side of the dough. Don't skimp on the cheese if only adding cheese. Remember it melts down.
Dip a finger into the milk and wipe it around the edge of the dough that has the ingredients on it.
Pull the half of the dough that is empty onto the othe half and press the dough together. Here I have found that folding the edges of the dough in on iteself helps it stick together.
Optional - Brush top of the pocket with milk and sprinkle with your favorite pizza seasoning.
