The beauty of chili is that there are so many variations and ways to make it, depending on your preferences or dietary restrictions.
- Ground beef can be substituted for ground turkey or chicken. You can leave out the meat altogether or substitute it for lentils or more beans.
- Add some heat! If you like things a little spicy you can add some peppers or spicier seasonings.
- Personalize the flavors for your family. You can add more spices or different vegetables if you want to change it up. Zucchini can be added without much notice and you’d be sneaking in an extra veggie.
- Finish with your favorite toppings from cheese and sour cream or avocado and tortilla chips.

- Ground Beef – Preferably from local grass-fed beef

I try to opt for local and organic ingredients when I can to ensure I am feeding my family the best possible foods for our health. I know this isn’t always an option so just do the best you can. Anything homemade, like this crockpot chili, is going to be better (for your health and your tastebuds) than fast foods.
Crockpot Taco Chili Recipe
Crockpot recipes are so easy. You toss the ingredients into the crockpot and turn it on. Done. They make great freezer meals or quick family dinners during busy nights.
First, brown 1 lb of ground beef and add it to the crockpot. Drain a can of corn (I used a pint jar full but a regular 15 oz can will work), and one 15 oz can each of black beans, navy beans, and garbanzo beans. Rinse the beans and add the beans and corn to the crockpot. Add a 28 oz can (or quart-sized jar) of diced tomatoes and a 15 oz can (or pint) of tomato sauce.
Add the taco seasoning and stir. You can certainly buy a packet of taco seasoning, but if you want the added benefits of homemade taco seasoning, try this recipe. When you make your own taco seasoning you have more control over the flavors that are going in. Add more or less depending on how strong you want the flavor.
Cook in the crockpot on low for 4-6 hours or on high for 3-4 hours. When you’re ready to serve top with your favorites: avocado, sour cream, tortilla chips, cilantro, or cheese! Beware, your house will smell delicious all day and it is difficult to wait until dinner time to dig in. 😆
Easy Meal Prepping
I love to meal prep and make freezer meals to make my life easier in the future. There are a few ways I do this with crockpot taco chili. First, you can buy ground beef in bulk and prep it for different meals by browning some of it and making hamburger patties with some of it. Put it into bags or containers and put it in the freezer. I usually freeze the ground beef in 1 lb amounts so when I’m ready to use it for a recipe I already have the right amount.
When you’re ready to make your chili you can add the frozen ground beef into the crockpot, followed by the other ingredients. It shortens your prep and clean-up by a little bit because you’re eliminating the need to brown the ground beef. It’s a small savings here but when you’re in a hurry to get dinner in the crockpot and get out the door to work or move on with your day it makes a big difference. Sometimes that small time savings is what allows me to actually get dinner thrown in the crockpot before I have to run and do some other things.
Another way to meal prep taco chili is to make a large batch and split it into smaller amounts and freeze for later. Then all you need to do is leave it out overnight and then reheat when you want to eat it. This is a big time-saver. Even making just the normal batch of chili is a lot and you can freeze the leftovers.
