Pizookie Recipe: How to Make a Big Cast Iron Cookie

I grew up loving to bake but I do not like making batches or cookies. I want to make my dessert, throw it in the oven, and be done. That’s why this Easy Pizookie Recipe is PERFECT. It’s got the ooey gooey delicious center, and there’s no need to make batches and batches of cookies. Grab your ingredients, throw them in the cast iron, and in the oven it goes. What is a Pizookie?

A pizookie is a delicious and giant cookie that has a gooey center (if that’s what you like!) And it’s cut like a pizza so it’s a pizza-cookie…a PIZOOKIE

What You’ll Need:

  • 10-inch cast iron skillet
  • Butter—1 cup of butter. If you want to control the amount of salt in your recipe, use unsalted butter.
  • Sugars—1/2 cup organic raw sugar and 1 cup of brown sugar, which you can make yourself in 2 minutes with 2 ingredients! I love combining both types of sugar, especially in cookie recipes.
  • Eggs—Room temperature eggs help your cookie dough come together better, bake more evenly, and result in a delicious, chewy texture.
  • Vanilla—Use 2 tsp of vanilla. You’ll get bonus points if you make your own vanilla as well.
  • All-Purpose Flour—2 1/2 cups of organic, unbleached flour is my favorite kind to use.
  • Baking Soda—1 tsp of baking soda will help your picookie rise, and develop that perfect texture and golden-brown color.
  • Salt—1 tsp for a perfectly salty pizookie recipe.
  • Semisweet or Milk Chocolate Chips—1 1/4 cups of chocolate chips plus a few more if you want to put them on top. I prefer milk chocolate, but semi-sweet is delicious too and will help balance out the sweet flavor.
  • Vanilla Ice Cream—Optional for serving on top of your pizookie! You can also add drizzled chocolate or caramel, whipped cream, etc. Get creative!

How to Make the Perfect Pizookie Recipe in a Cast Iron Skillet

Melt the butter right in your cast iron over medium-low heat. This is perfect for melting butter as well as greasing the cast iron without getting another bowl dirty and avoiding using the microwave.

Preheat the oven to 325ºF.

Pour the melted butter into a mixing bowl (or if you want to mix your ingredients in the cast iron, you can do that too!). Add sugar and brown sugar. Combine and then allow to cool slightly before mixing in the eggs and vanilla. Stir until everything in incorporated.

Add flour, salt, and baking soda to the wet ingredients and stir until everything is well combined. Fold in the delicious chocolate chips.

Put the cookie dough into the prepared cast iron and spread it out evenly. Bake for about 30 minutes. Check after 25 minutes for the doneness you desire in the middle. The longer it bakes, the more it will be cooked in the middle. The edges should be golden brown.

Allow to cool for about 10 minutes, add some ice cream, and enjoy!

How to Serve the Pizookie & Different Variations

If you can stand to wait for the pizookie to cool off, serve with:

  • ice cream
  • whipped cream
  • chocolate syrup
  • caramel syrup
  • pecans

This pizookie recipe is a basic one with only chocolate chips but there are so many variations you can try! Add M&M’s, Reese’s Pieces, or chopped Reese’s Cups, yum!

FAQs

I forgot to take the eggs out of the fridge, so they aren’t at room temperature. How can I warm them up quickly?

Put the eggs in a bowl of warm (but not hot) water. They should be up to room temperature in 5-10 minutes.

I don’t have a cast iron, can I make this pizookie recipe without a cast iron?

Yes! You can make this recipe without a cast iron. While the cast iron will give the pizookie a nice crispy edge and an even texture, you can use any oven-safe baking dish, pie pan, or pizza pan.

Can I make this recipe ahead of time?

Yes! You can make the dough 24 hours in advance. Allow to come to room temperature and then bake as directed. You can also bake the pizookie up to two days ahead of time and reheat in the oven to serve warm.

Can I make mini pizookies instead of one big pizookie?

Wait, wouldn’t these just be cookies? 🤣 You can make smaller pizookies by dividing the pizookie dough into smaller sections and bake in smaller cast iron skillets for 2-3 servings instead of 8. Just pay attention to the baking time because you don’t want to overcook.
